Default Will Reprogrammed ECU erase?

Hello,

If I have my ECU reprogrammed for performance, will the modifications erase if I reset it by unplugging the Negative terminal on my battery?

What is the difference between the new programmed fuel curves and the ones the ECU learns from daily driving? What is actually reset? Thanks
