can you still use a strut brace with the spacers ?
can you use the spacers with the plastic manifolds ?

how much do they move the intake manifold ?

They move the intake manifold only about 3mm farther away from the head towards the firewall. I can't see any way this would interfere with your strut tower brace except that you may want to remove the brace during installation to make it easier to get to things.

As far as fitting with a plastic intake manifold I can't see how it would not fit. If your gasket is part number 28411-26011 it'll work for sure.
