driving what way?

i just wanted to see how most people drive while racing. is it either one hand on the stick and one hand on the wheel? or is it both hands on the wheel and one on the stick only when needed?

Hands between 9 and 3 or 10 and 2, BOTH on the wheel, only moving the right hand when necessary to shift.

On the circuit the hands should not move, and the movement should be isolated to the arms only, thus the seat should be pretty upright. The shoulders should remain stable and planted against the seat for good support when a full turn is made, and finally the seat should be set in a way that allows good access to the pedals with good flexability at the ankles.
